"Education is a big part of what we do here. I don’t just want someone to buy a knife; I want them to understand it.
it's important to me that customers are guided by a real chef - someone who's worked the line, understands technique, and knows firsthand why balance, profile, and steel matter.
When you understand why a knife performs the way it does, the choice becomes informed and intentional."
- Chef Don Guthro
Chef-Designed, Canadian-Man, Built to Perform
DICED Knives is proudly presented by Chef Don Guthro.
Raised on a working farm and later trained professionally at the National Ballet of Canada, Don developed an early reverence for discipline, precision, and craft.
After a knee injury redirected his path, he went on to build an international culinary career, working in acclaimed kitchens overseas. He later operated the beloved Diced Discovery Café at Jericho Beach for 15 years, helping support the growth of Diced Culinary School, a social enterprise dedicated to expanding access to culinary training.
Through its programs, including a meal initiative that prepares and delivers nearly 1,400 meals each day, producing over 6 million meals over 12 years for at-risk and marginalized seniors, Diced Culinary creates affordable and sponsored pathways for students who might not otherwise have the opportunity to pursue a culinary education.
After years of running professional kitchens, Don grew frustrated with knives labelled "premium" that didn't live up to quality production standards; features that served marketing more than performance and durability.
He set out to raise the standard. Diced Knives was created with the clear purpose: to create a Canadian company that outperforms traditional premium models while remaining approachable and authentic.
We source high-performance stainless steel for strength and edge retention and process it through our Lower Mainland workshop, and assemble and finish handles at our immersive Granville Island retail location.
